I'd highly recommend the Giant Bomb app!
Edge and Flight Control are 2 of my favorite games.
Wikipedia's mobile "optimized" site is pretty awful, so something like Wikitap is useful.
Shazam can identify songs playing near your phone with reasonable accuracy.
You've got to do a little circumvention to get the Skype app in Canada, but it's very much worth it.
Enjoy the new phone, it's definitely the best way to make Rogers' terrible service more tolerable.
Instapaper would be my first suggestion, it allows you to essentially download sites for offline reading. Great for the airplane.
Pandora for the radio.
Pocket Got is an entertaining game.
